Bloody Mary Gazpacho Soup

One of our favorite ways to use Gold Hen outside of cocktails is to utilize it as a base for soups and chili, including Gazpacho! While a cold soup made from raw blended vegetables is tremendously refreshing during the Summer months, Gazpacho can be enjoyed all year long and is exceptional when you add in our “Sweet with a Little Heat” Bloody Mary Mix!

Here’s what you’ll need to get rolling and a step-by-step process to make this one at home…Enjoy!

  • 2 lbs ripe Roma Tomatoes

  • 1 cup Gold Hen Bloody Mary Mix

  • 1 1/2 cup Cucumber, peeled, seeded, and diced

  • 1 1/2 cup Bell Pepper, diced small

  • 1/2 Red Onion, diced small

  • 2 cloves Garlic

  • 3 tbsp Olive Oil

  • 2 tbsp Sherry Vinegar

  • 1 tsp Sea Salt

  • 1/2 cracked Black Pepper

  • 1/2 tsp Cumin

  • 1 thick slice white bread, crusts removed, soaked in Gold Hen Bloody Mary Mix

  • 1/4 cup chopped Cilantro

    • Set aside 1/2 cup of cucumber, red onion, and bell peppers

    • Place all remaining ingredients in blender and puree until smooth. Pour into large bowl.

    • Fold in reserved vegetables. Season to taste with salt and pepper.

    • Garnish with chopped cilantro.
